Fish is filled with nutrition while mango is a summer favorite fruit. This salad beautifully merges fleshy fish and mango and would help you to remain fit.

What Do You Require?

Mango – 1

Lebanese Cucumber – 1 sliced

Ginger – 1 tsp grated

Fish Fillets – 200 gm

Capsicum (Red or Green or Yellow) – ½ in thin slices

Ripe Mango – 1

Coriander – 1 tsp finely chopped

Olive Oil – 2 tsp

Sweet Chili Sauce – 1 tsp

Lemon Juice – 2 tsp

Light Soya Sauce – 1 tsp

How To Make It?

Peel the ripe mango first and cut into thin slices. Follow the same with capsicum and cucumber. Place them together in a bowl and toss well.

In another bowl prepare the dressing by mixing light soya sauce, sweet chili sauce, lemon juice, coriander, and ginger.

Preheat a griller or barbecue to cook the fish. Apply some olive oil on the fish fillets and cook both the sides for 4-5 minutes.

Check if cooked or not.

Place some crunchy veggies on a serving dish and place the cooked fish fillets on it and finally apply the dressing.

Mango is really the summer favorite fruit which is full of vitamin C, vitamin A, and flavonoids. It helps you maintain a low cholesterol, blood pressure, aids in good vision and digestion. Additionally, you can also lose some weight if you follow this tuna and mango salad for your lunch.

What Do You Require?

Tuna – 200 gm

Ripe Mango – 1 diced into small pieces

Olive Oil – 1 or 2 tsp

Coriander – 1 bunch finely chopped

Lemon Juice – ½ or 1 tsp

Chili Sauce – 1 tsp

Onion – 2 tsp finely chopped

How To Make It?

Heat the olive oil in a pan or over a barbecue to cook the tuna fish. Cook both the sides of the fish very well for 4-5 minutes.

In a small bowl mix coriander, chili sauce, onion, lemon juice. Then add the diced mangoes and toss it well.

Finally, place the tuna in the serving dish and top that with the mango salsa to enjoy a fabulous salad.

Cucumber and tomato are both very effective if you want to lose some weight and stay fit. You can try this at any time of the year but the cooling effect of tomato and cucumber would make it a great summer recipe. Cucumbers contain variants of vitamin B like vitamin B1, vitamin B5, and vitamin B7. This vitamin is known for combating feelings of anxiety and stress. It also contains water and fiber and thus aids in digestion. On the other hand, tomatoes are a rich source of antioxidants which eliminates the risk of cancer and heart diseases. The harmful effect of sun rays is also mitigated with consumption of tomatoes.

What Do You Require?

Cucumber – 1 large, sliced

Tomato – 3 large, sliced into ½ inches

Cider Vinegar – 1 tsp

Mustard Seeds – 2 tsp

Cumin Seeds – 1 tsp

Onion – 1 thinly sliced

Coriander Seeds – 2 tsp

Salt n Pepper – As per taste

Sugar – 1 tsp

Coriander – ½ to 1 tsp finely chopped

Olive Oil – 1 tsp

How To Make It?

Cook mustard and coriander seeds in a wok. Stir occasionally for 2-3 minutes until they start popping. Now add cumin seeds and cook for another 2 minutes. There would be a lovely aroma coming out from the spices.

Add vinegar, sugar, salt, pepper, and 1 cup of water in it. Let it simmer for some time and stir occasionally. Make sure the sugar and salt completely dissolve.

Pour this vinegar mixture on the thinly sliced onions and keep at room temperature for some time. Once completely cooled, refrigerate it for 1 hour.

Now in a large bowl, arrange the tomatoes and cucumber and spread the dressing. Finally, add the coriander and enjoy this crunchy treat!

Watermelon – 4 to 5 cups of small cubes

Strawberries – 12 large/24 medium/36 small

Raspberries – 12 large/24 medium/36 small

Cherries – 12 large/24 medium/36 small

Blackberries – 6 large/12 medium/24 small

Lemon Juice – ½ to 1 tsp

How To Make It?

Cut the berries into bite-sized pieces and mix them with watermelon in a large bowl. Toss them nicely. Sprinkle some salt, pepper, and lemon juice. You may also add some fresh coriander leaves. Refrigerate it for at least half an hour and enjoy this chilled salad.

Chickpeas are high in fiber, carbohydrates, and protein and also contain several key vitamins and minerals. It helps in weight loss, controlling blood sugar levels, and aiding in weight loss. Pomegranate, on the other hand, is a great source of vitamin C and antioxidants. It also has anti-inflammatory properties and helps in a good digestion and a good functioning of the heart.

What Do You Require?

Broccoli – 4 cups of bite-sized florets

Chickpea – About 400 gm

Pomegranate – ½ cup

Yogurt – ½ cup

Onion – 1/4th cup thinly sliced.

Cumin – ½ tsp coarsely grounded

Olive Oil – 2 tsp

Tahini – 2 tsp

Salt n Pepper – As per taste

Lemon Juice – 1 tsp

How To Make It?

Keep the thinly sliced onions in a bowl of cold water for about 10 minutes and drain well. Keep the onions aside and start preparing the salad dressing.

Add the coarsely grounded cumin seeds in a wok or skillet and roast for 2-3 minutes. Once the mesmerizing fragrance comes out to remove from heat.

Take a large or medium bowl and add the yogurt, tahini, oil, salt, pepper, and lemon juice. Sprinkle the cumin over it and give a nice mix.

Now add the main heroes of this salad i.e., broccoli, chickpeas, and pomegranate and toss very well.

Refrigerate for some time and enjoy this unique summer salad.
